2 whole eggs
150 g natural Greek yoghurt (0% or 2%)
150 g flour (type 1, oat, spelt... depending on your preference)
100 g erythritol (or another natural sweetener)
1 sachet of baking powder (about 16 g)
Optional:
15 g sugar-free dark chocolate chips
or 20 g soaked raisins
Preparation
Beat the eggs with the erythritol.
Crack the eggs into a large bowl and add the erythritol. Beat with a whisk (or an electric mixer) for a few minutes, until the mixture is light and fluffy. This step helps make the cake fluffier.
Add the
yoghurt (preferably at room temperature) and mix.
Add the flour and baking powder.
Sift the flour and baking powder together and gradually add them, stirring gently from the bottom up. Add chocolate chips or raisins if desired.
Pour the batter into the baking pan.
Use a 20cm round baking pan lined with parchment paper or lightly greased. Pour the batter in and smooth the top.
Bake in a preheated oven at 180°C (350°F) for 25-30 minutes
. Test with a toothpick to see if it's done: if it comes out clean, it's ready.
Let cool completely.
Place the cake on a wire rack and let it cool for at least 15 minutes before slicing. Sprinkle the surface with a little erythritol, if desired.
